Awesome Beetroot Veggie Burgers

Now, here is a nice and easy recipe for a delicious vegan burger. That’s right, you’re not mistaken. This recipe will amaze your taste bulb.

Ingredients (for 2 burgers):

1 cup of beetroot, peeled and diced
1 small onion, chopped
½ cup of whole-wheat bread crumbs
½ cup of cooked quinoa
1 teaspoon of flax seeds
1 garlic clove, minced
1½ gram flour
1 tablespoon of freshly squeezed lemon juice
1 tablespoon of olive oil
½ tablespoon of coconut oil
A pinch of salt

How to make the veggie burgers:

Bake the diced beets in a preheated 350°F oven for about 30 minutes.

After cooling, use a food processor to pulse the beets a few times, creating a light fiber texture.

Use a large bowl to mix together all the ingredients. If the mixture is not consistent enough, add more bread crumbs until you achieve the desired texture.

Shape the burgers and place on baking sheets. Bake in a preheated 350°F for 15 minute, flip the burgers, then bake 15 more minutes.

Serve in whole wheat buns with sliced tomatoes and onions, vegan mayonnaise and lettuce.
