Chicken Roulade With Olives Tapanade

Roger Vergé is considered by many as one of the greatest chefs of our time. Although his basic training was classic French, his cooking cuisine was influenced dearly during his over-seas experience, when he worked in Morocco and Kenya at the early days of his career. Besides operating his famed Le Moulin de Mougins restaurant in Mougins, France, he had also written several cookbooks and produced a line of jams, teas and more. His entrée of the day is Chicken roulade filled with chicken mousse and black olives tapenade.
