Eggplants Caponata Charlotte

The five star Lanesborough Hotel, located on Hyde Park Corner, Central London, was originally the home of the St George’s Hospital, which occupied the Kanesborough House since 1733. In the early 19th century the building was torn down, rebuilt, and continued to serve as a hospital until the 1970s, when the hospital has moved to south of London. In 1991, the building was re-opened, now as a luxury hotel. The executive chef of this historic estate is Chef Paul Gayler, a well reputed English Chef, which have spent all of his career within the boundaries of London. His Appetizer of the day is dedicated to the vegetarians amongst the diners – Eggplants Caponata Charlotte – eggplants mouse with cooked vegetables and goat cheese.
