Foie Gras Carpaccio

The small town of Joigny in Burgundy, France, is home of Chef Jean Michel Lorain’s Michelin stared restaurant La Côte St.-Jacques. Apart from owning the restaurant, Lorain operates a well-known cooking school. He had also published four cookbooks along with his father. His appetizer is a Foie Gras Carpaccio, presented on baby Leeks.
