Going Vegetarian

Nothing like a trip to the market to feed your cooking inspiration. As it happens, the rich verity of vegetables in the Spanish markets inspired our chef to cook a vegetarian stew, based on the uncommon combination of chickpeas, pumpkins and pears. This vegan stew, drawing it’s flavors from the Moor and Arabic history of the region, is almond and saffron scented, it’s strong flavors gently wrap your tongue.
