Herbs Crusted Lamb

Philip Howard is the head chef of the fabled London restaurant The Square. The South African born British chef is known to be a sport enthusiast, and when he is not cooking, he is most likely swimming, skiing or running. In fact, in his time, he had participated in several marathons in London and New York. His entrée of the day is not quite the sporty one, or at least not one you would eat before a long run- a delicious crusted saddle of lamb with potatoes, shallots and spinach in reduced lamb stock with tomatoes.
