How to Make Salt in Bocca

Floyd is exploring the Italian taste by making his own special interpretation of a traditional dish called “Salt in Bocca”. This is a dish usually made in southern Switzerland, Italy, Spain and Greece, consisting a fried Veal fillet, rolled with Parma Ham and sage. In his version of the dish, Floyd is combining sea and land while adding fresh Langoustine to the pot.
