Italian Coffee Mousse

The Italian family restaurant Al Bersagliere in Goito, Italy, is operated by Massimo Ferrari, the fifth generation in a line of chefs that run the traditional establishment. Today, his son works with him, and learn the family secrets, the way he learned from his mother and grandmother, in order to one day take over the family business. His dessert, a coffee and chocolate mousse, reflects the fine Italian heritage featured in his cooking.
