How to Make a Filet Mignon

Chef Emmanuel Bassolei, from the restaurant Roanne in Sao Paulo, Brazil, is taking the French cuisine to new places, as he is combining the Brazilian products and the essence of the French kitchen. The young chef got his cooking training in several hotels in Dijon, where he was born and raised, before he moved to Sao Paulo and Roanne. His entrée is a filet mignon stuffed with mushrooms.
