After a long day in the mountains of Sierra Nevada, The local mountain shepherds happily enjoy an outdoor supper. One of the most popular dishes amongst the locals is a rabbit stew with wild mushrooms and red wine. The Spanish kitchen has uses few ways to thicken the dishes’ gravy. One of them, repeating in many recipes, is by adding ground almonds. This recipe, however, uses the rabbits liver, to do the exact same thing. The result is astonishing.
