Rhubarb and Ice Cream Gratin

The Longueville House in Mallow, Ireland, was built in 1720 by the Longfield family. The current owner and manager of the estate is William O’callagan, a descendant of the famous Donough O’callaghan, who fought beside the Catholics in the 1641 rebellion. William O’callaghan is a fighter by his own measures, roaming the kitchens of the Loungeville House in creating fine imaginative dishes cuisine, which draws its inspiration from the traditional French and Irish kitchens. His dessert is a fine example for this tendency – candid rhubarb layered with elderflower and lemon balm ice cream.
