Seafood Fusion

Chef Director of the Abac restaurant in Barcelona, Xavier Pellicer, had started his career when he was only 13 years old. The chef, coming from multi-national house, combines the French and Spanish kitchens in his work, drawing his inspiration from his mother’s French origins as well as his father’s Catalan heritage. This fusion is presented beautifully in this simple appetizer of marinated Tuna with Broccoli puree.
