Swamp Duck with Apples

Alain Passard, Chef and owner of the three Michelin stars restaurant L’Arpège in Paris. Throughout his long career, beside his chef work, he had been writing food columns for main French magazines and teaching the art of Elite cuisine, while never neglecting his chef duties. His entrée of the day is a swamp duck in miso paste and ginger, a large dish, suitable for a festive dinner, which combines Eastern and European flavors and methods.
