Traditional Chilean Seafood Stew

Aquí Esta Coco in Santiago, Chile, is considered one of the best seafood restaurants in the city, this is due to the love the chef and owner of the restaurant, Coco Pacheco, has for seafood. The chef grew up in southern Chile, where he watched the fishermen work their way and harvest the seas. His nostalgic approach to cooking seafood is easily shown in his delicious shellfish stew recipe, which he agreed to share with us.
