White Wine Parfait

The five star Sacher Hotel in the center of Vienna features the desserts of Helmut Lengauer. The chef joined the hotel only two years after he got his certification as pastry chef, and stayed ever since. Although the Sacher hotel is mostly famous for its Tort, Chef Langauer couldn’t teach us the top secret recipe, but was kind enough to show us how to make his delicious Riesling parfait with poached apples.
